The oil produced by the Foddi Mill is characterised by a distinctive bouquet of cardoon, artichokes and cut grass. The mouthfeel recalls a medium intensity green fruitness. On the palate it has a balanced taste, first bitter then piquant.
The production process involves filling kegs about 200 l with olives of the “Nera di Gonnos” cultivar, water and salt. All the ingredients are brewed for eight/nine months, until the fruits are completely ripe.
